Here is something you can make with all that leftover turkey and mash potato. And it makes a new and tasty dish, Shepherd’s pie. Why not try it instead of wasting all that good food sitting in the refrigerator after Thanksgiving.
- Preheat the oven to 400 degrees Fahrenheit.
- Put 2 tablespoons of olive oil in a saucepan.
- Add one cup pearl onions
- Add three small diced carrots
- Cook for five minutes
- And a pound of leftover turkey
- Cook until brown
- Sprinkle a tablespoon of all-purpose flour over the mixture.
- Cook for an additional three minutes
- Add one tablespoon of olive oil
- Add 1 cup of frozen peas
- Add a generous amount of thyme
- Add some salt
- Add some black pepper
- Add 3/4 cups of chicken broth
- Simmer for five minutes
- Separate the mixture into four small bowls
- Add any leftover mash potato on the top of the mixture in each bowl
- Bake in the oven for twenty-five minutes at 400 degrees Fahrenheit
